How do you create a new form type with additional fields that are not in the default “Form Types”? Or how do you add additional fields to one of the existing form types?

If your entity is extended you can add fields via entity management. If not, you can add new field with a form extension and will write something like this inside it:

Are there intentions to make this easier? I was sold on OroCRM until the answer to this question just now.

There are two ways to add fields either via UI or form extension/migrations. How to do adding process is easier on your opinion?

Form management UI is in our long-term roadmap but it’s unlikely to be shipped within (at least) two next releases.

We always welcome community contributions though.
